4 oz cherry tomatoes, quartered
4 tsp extra virgin olive oil
salt and pepper
15oz can black beans, rinsed
1/4 cup boiling water
1/4 tsp grated lime zest + 1 tbsp juice
4 slices crusty whole wheat bread
1 ripe avocado, halved, sliced thin
1/4 cup sweet and spicy pickled red onions
1/4 cup cilantro leaves
Mix tomatoes, 1 tsp oil, pinch salt and pepper in bowl. Mash beans, boiling water, lime zest, lime juice, 1/2 tsp salt, pinch pepper and olive oil with potato masher to course puree in second bowl, leaving some whole beans intact.
Adjust oven rack 4 inches from broiler element and heat broiler. Place bread on baking sheet and broil until golden 1-2 mins per side
Spread mashed bean mixture evenly on toasts top with avocado and season with salt to taste. Top with pickled onions and tomatoes, if using cilantro leave, and serve,
Sweet and spicy pickled red onions: slice a red onion thin, slice one jalapeno pepper put in glass bowl and pour 1 cup red wine vinegar and a spoon of sugar. Let sit 2 hrs and drain.
